Easy to make and the leftovers re-heat well, give this one a try!
Inspired by the Spinach and Artichoke Quiche from Bravo for Paleo I often adjust recipes and came up with this variation.
Egg Whites (I used Egg Beaters) equivalent to 6 eggs – about 1 1/4 cups
1 small of half a medium Onion, Chopped
8-10oz Frozen Spinach – thoroughly thawed and drained
1 can Artichoke Hearts, drained and chopped
1/2 to 1 tsp Garlic Powder
Dash of Cayenne Pepper
1/2 Cup Light Coconut Milk
1/2 Tsp Baking Powder
Salt and Pepper
1/2 Cup Freshly Grated Cheddar Cheese
– Preheat Oven to 350
– Combine Eggs and Coconut milk first then add in all other ingredients. Pour into 9 inch pie or cake dish. Bake 30-45 minutes or until set. Enjoy!
Promise it’s super easy to make – the ingredient list is longer than the assembly 🙂
