Easy Lentil and Veggie Soup

lentilsI’ll be the first to admit, this is NOT a very photogenic recipe! But it is super easy to make and really delicious.

When cooking I tend to just put things together and have made some version of this several times now. Easy to adjust to your preferences, gives this really easy lentil and veggie soup a try!

What you’ll need:
1 pound bag of dry green lentils (I use Trader Joe’s)
1/2 to 1 small or med onion, chopped
1/2 pound of mushrooms (I use baby bellas), chopped
32 to 40 oz of Veggie Stock
Salt and Pepper
Garlic (minced or powder)
Frozen veggies (chopped spinach and cut green beans work well)
Olive oil or Coconut Oil

To prepare:

Heat the oil in a med to large pot over Med Heat. Add the onion and sauté till tender.

Add the mushrooms, some salt and pepper, continue to cook till mushrooms are tender.

Add in the dry lentils, garlic and any other dry spices – I usually add some cayenne pepper, sometimes turmeric or cumin.

Once that’s all combined, add in enough Veggie Broth to more than cover the lentils, if it needs more liquid you can add water too.

Add in the frozen veggies of your choice, and stir to combine. Add more salt if needed.

Bring to slow boil then turn down the heat and Simmer till lentils are tender, around 30-45 minutes.
