Veggie Lasagna in the Crock Pot

lasagnaLasagna isn’t one of my favorite things to make because it’s so much work. So I was very excited to try out this crock pot veggie lasagna recipe and it did NOT disappoint!

This may be the only way I make lasagna from now on 🙂

NO pre-cooking, this is so easy to put together. Turn the crock pot on and in a few hours a delicious veggie lasagna is ready.

What you’ll need for the recipe:
Uncooked lasagna noodles
Tomato sauce
Mushrooms (I used lots of cremini mushrooms)
Spinach (frozen and thawed/drained or fresh)
Cheese! Mozzarella, Ricotta and Parmesan
Garlic, Basil and ground pepper
Veggie crumbles (I omitted them and it was still great)

To assemble all you do is mix the cheeses, spinach, spices. Separately mix the sauce and mushrooms (and veggie crumbles if using). Then layer sauce, uncooked noodles, cheese mix a few times. Cover, set the crock to low and in 5-6 hours it’s done.

This really is a winner, if you like lasagna but hate all the work give this veggie crock pot lasagna recipe a try!
