Easy Baked Sweet Potato Rounds

sweet potatoesThese are SO simple to make and have become my favorite quick sweet potato method.

Slice sweet potatoes into thin rounds (I leave the skin on but you could peel before slicing). Layer on a baking sheet.

Drizzle with a little olive oil. Sprinkle salt, pepper, oregano and/or basil, toss a little to coat. I usually add a little cayenne pepper and garlic powder too.

Bake at 425 degrees for 15-20 minutes, turning over once about halfway through. Done!

If you like sweet potatoes give this method a try 🙂
