Slice sweet potatoes into thin rounds (I leave the skin on but you could peel before slicing). Layer on a baking sheet.
Drizzle with a little olive oil. Sprinkle salt, pepper, oregano and/or basil, toss a little to coat. I usually add a little cayenne pepper and garlic powder too.
Bake at 425 degrees for 15-20 minutes, turning over once about halfway through. Done!
