Baked Apples and Sweet Potatoes

Simple to prepare and really tasty, baked apples and sweet potatoes would make a great holiday side dish.

Cubed apples and sweet potatoes, drizzled with a mix of coconut oil, sugar (I used agave), cinnamon and nutmeg then baked. The result is a rather healthy and nice variation on traditional sweet potato or apple dishes.

For the full and original recipe – Apple and Sweet Potato Casserole

I wouldn’t have thought to combine apples and sweet potatoes but it works and isn’t overly sweet – you could adjust sweetness to your taste.

Love that it’s a chop, mix, bake and done type of recipe! Definitely perfect for holidays or Fall.
