Super Easy Parmesan Spinach “Cakes”


Made these last week and they took almost no time to put together – just spinach, cheese(s), eggs and seasoning baked in a muffin pan!

Simple ingredients, tasty result and they look much more fancy than they really are to assemble.

The original recipe is from Eating Well – Parmesan Spinach Cakes

And since I can rarely make a recipe exactly as written – I made some changes based on what I had on hand.

I used:
1 bag (16oz) frozen Trader Joe’s Spinach, thawed and drained
2 eggs
2 egg whites
1 Cup Grated Parmesan Cheese
1 Cup Ricotta Cheese
Salt and Pepper
1-2 Tsp Garlic powder

Combine all ingredients in a  mixing bowl and fill muffin pans – my version made 10 “cakes” but I kinda overfilled them a bit, it could’ve made 12.

Bake at 400 Degrees for about 20 minutes, and enjoy!

Oh, and I have the silicone type muffin pans so I didn’t use cooking spray but if using a standard pan spraying with cooking spray before filling is probably a good idea.
