Spinach, Olive Oil and Caramelized Onion Quick Bread

Tried this recipe out today and is it delicious!!!! A savory quick bread (no kneading) with spinach, caramelized onion and olive oil.  Not your average bread at all.

And it’s green (kind of)….just in time for St Patrick’s Day 🙂

What you’ll need for the recipe:

Olive Oil
Flour (I used whole wheat flour)
Spinach (I used frozen)
Baking Powder
Feta Cheese

The only changes I made to the recipe were to sub whole wheat flour for all-purpose, added in extra spinach (just because), and I used slightly less olive oil (about 1/2 cup).  I did have to bake it slightly longer than 40 minutes – closer to 45 or 50 but my oven can be temperamental.

This is DEFINITELY going into my tried and successful recipe collection.  It really is a different and very tasty version of quick bread.  And it’s not complicated to prepare – while the onions were cooking I got the dry and wet ingredients ready.

The hardest part was waiting for it to be done and cool enough to taste 🙂

This is one of the times I’m thankful my husband is currently boycotting carbs – I get to keep this bread all for myself!
