Veggie Twice Baked Potatoes


I’ve made twice baked potatoes in the past and they’ve always been good but when it’s just potato and cheese, it’s not all that exciting.

Then I found this recipe for Veggie Stuffed Potatoes, gave it a try last night and these are awesome!!! Adding veggies transforms some run of the mill potato/cheese into what could be a meal on its own (if you prefer meat you could always add in some cooked sausage to the stuffing)

While the potatoes are baking, saute broccoli, mushrooms (I added some minced garlic).  Once potatoes are done and scooped out, just a little butter, milk, cheese, and the veggies combine with the scooped out potato to make the filling.

Stuff the potato shells and bake just a little longer – you’ll have a tasty and substantial version of the popular twice baked potato!

What you’ll need for this recipe:
Baking potatoes
Chopped Broccoli and Mushrooms (or really any veggies you like)
Minced Garlic (optional)
Green Onions
Grated Cheese
Salt and Pepper
Oven pre-heated to 425 degrees

* These do make great leftovers, the picture is from one that was re-heated so the top got a little extra crispy (which I don’t mind) since I used the toaster oven to re-heat.
