Cheesy Vegetable Soup Recipe


This soup is warm, comforting but not too heavy and it’s perfect for this time of year!  It’s similar to broccoli cheddar soup but with lots more veggies.

Inspired by the site Lulu the Baker (who has some really cool recipes, worth checking out!) I made some adjustments to the original and this is a very easy recipe to tweak and modify to your preferences.

Recipe adapted from Cheesy Vegetable Chowder

1-2 Tbs Butter (just enough to coat the bottom of the pot)
2-3 medium Carrots, chopped or grated
1 medium Onion, chopped
1 medium Zucchini, diced
1-2 Tbs Garlic, minced
1/4 Tsp Red Pepper flakes (optional)
4 Cups Vegetable Broth
2 Potatoes, cubed (I left skin on but you can peel before cubing if you prefer)
1 Tbs Flour
1/2 Cup Water
1/2 Cup Milk
3 Cups Frozen Broccoli (chopped or small florets)
2 Cups Shredded Cheese

– Melt Butter in a large pot over Medium Heat.  Add onion, carrot, zucchini and cook until vegetables are tender

– Add garlic and red pepper flakes and saute another minute or so

– Add broth and potatoes, bring to a Boil and simmer till potatoes are tender (about 10-15 minutes)

– Combine Flour and Water.  Add to the pot and simmer, stirring occasionally until soup begins to thicken

– Add milk and broccoli, continue to simmer until broccoli is tender

– Remove from heat and stir in cheese

– Enjoy!!!!

This makes great leftovers and next time I may try substituting cauliflower for the potatoes (my husband is super carb conscious) but we both really liked this soup and I think it just may become a regular cool weather meal 🙂
