Zucchini Ziti…In a Crock Pot!


Ziti isn’t something I make often (can’t remember the last time I did!) but I found a recipe for Crock Pot Zucchini Ziti and figured it was worth a try. 


I do like easy and no fuss recipes…with veggies is even better!

I made it this afternoon and it came out great!!! Maybe 10 minutes to assemble in the crock pot, then just let it cook – crock pots can vary and mine did take a little over 2 hours.  Not an all day cook-time and would be great for weekends meals.

Basically you combine mozzarella, cottage cheese (this surprised me but it was really good!), some spices and that’s the cheese layer.

Use jar marinara sauce, UNcooked pasta, and sliced zucchini for the other layers.

As it cooks, everything melds together and mixes on its own.

I did add some garlic to the cheese mix and used 2 medium zucchini instead of 1 large.  And I used rotini pasta instead of penne since that’s what I had on hand.

Check the pasta around 2 hours and let it go longer if needed.  I let it stand for 20 minutes or so and it did thicken up.

Now we have some tasty leftovers for this week 🙂  Give it a try, I might just make ziti more often now that I have this recipe!
