Sliced potatoes (almost but not all the way through), some salt & pepper, garlic, butter and olive oil bake into a very pretty potato creation.
Great on their own, or you can sprinkle with some parmesan cheese once they’re done – perfect!!!

Apparently this is a Swedish style of baking potatoes. I’d never heard of it before finding the blog with the recipe but I’ve definitely become a fan 🙂
The edges get all crispy and the insides of the potato slices are tender. Plus they’re already seasoned and ready to
devour eat right out of the oven!
One note: I’ve found it takes a little longer than 40 minutes, more like 45-50 minutes for them to bake through. Could be my oven so probably a good idea to check them around 40 minutes and see if they need longer or not
