Hasselback Baked Potatoes with Garlic and Cheese!


This is my new favorite way to prepare baked potatoes – it’s simple but looks really elegant and fancy.  Oh and it’s very tasty too!

Sliced potatoes (almost but not all the way through), some salt & pepper, garlic, butter and olive oil bake into a very pretty potato creation.

Great on their own, or you can sprinkle with some parmesan cheese once they’re done – perfect!!!

For the recipe – Hasselback Baked Potatoes

Apparently this is a Swedish style of baking potatoes.
I’d never heard of it before finding the blog with the recipe but I’ve definitely become a fan 🙂

The edges get all crispy and the insides of the potato slices are tender.  Plus they’re already seasoned and ready to devour eat right out of the oven!

One note: I’ve found it takes a little longer than 40 minutes, more like 45-50 minutes for them to bake through.
  Could be my oven so probably a good idea to check them around 40 minutes and see if they need longer or not

    This is good. In the UK we just serve baked potatoes with baked beans and cheese (and thats on a good day)
