Blueberry Jam with Lemon and Honey

Made this over the weekend and it was SO good!!! I used frozen blueberries since that’s what I had in the house but you could use fresh (just make sure to crush them up or pulse in a food processor).

Just three ingredients and a little time simmering make a blueberry jam that’s WAY better than anything store bought.

Blueberry Jam with Lemon & Honey:
1 lb package frozen blueberries (thawed and UNdrained)
3-4 tbs of Honey
Zest and Juice of half a Lemon

 

Start the blueberries over med-low heat, crushing them up a bit with a fork.  Once bubbling turn heat to Low.

Add 3 Tbs of Honey and stir

Add Lemon zest and juice

Check the sweetness and add more honey if desired

Simmer over Low heat  for about 40-45 minutes or until the jam has reduced and thickened, stirring occasionally

The jam will firm up and set more once it cools.  This could also be done to make a topping for ice cream or cheesecake – just cut the simmer time back to 30 minutes or less so it doesn’t reduce as much.

Chill for at least an hour and enjoy!  Great on toast or bagels, or you can add to yogurt 🙂
