Cool Summertime Recipe

 

Ah, summertime in the South.  When the thought of turning on the oven or even the stove makes me cringe. 

This is one of my favorite things to make as a “no cooking” dish and the other night we had it for dinner!

Easy, simple and fresh ingredients – just layer sliced tomatoes with mozzarella cheese and basil.  Drizzle with a little balsamic vinegar or garlic infused olive oil, and done!

I’d actually meant to give Mary Kandell’s version a try but didn’t have any cucumber – check out her Warm Weather Salad recipe though for another variation on this perfect summertime combination.
